Super Easy Broiled Asparagus 2 Ways

Easy to prepare, yet so elegant, these simple recipes are a great way to include this green veggie goodness. Serve as a drool-inducing appetizer for entertaining or as a colorful addition to a healthy meal.

Asparagus is a great low-carb source of vitamin K, vitamin C, and folate. It’s also a decent source of fiber, B-complex vitamins, vitamin E, phosphorus, potassium and zinc. When selecting asparagus, look for fresh, thin, firm stalks and deep green or purple-tinged tips.

Prosciutto-Wrapped Asparagus

Perfect for parties! You can assemble these treats ahead of time and broil them at the last minute.

Yields about 12 spears
Ingredients
2 pounds asparagus spears, trimmed
1 cup ricotta cheese
12 ounces prosciutto
1/4 cup aged balsamic
Instructions

  • Adjust oven rack to highest position and turn on broiler.
  • Spread asparagus on a rimmed baking sheet.
  • Broil until fork tender, about 8 minutes.
  • Place asparagus on one end of a prosciutto slice, add a spoonful of ricotta. Firmly wrap the prosciutto around asparagus and ricotta. Repeat until all the ingredients have been used.
  • Broil until golden, about 3 minutes. Let cool. Drizzle with aged/reduced balsamic.

Simple Broiled Asparagus

  • Adjust oven rack to highest position and turn on broiler.
  • Spread asparagus on a rimmed baking sheet.
  • Broil until fork tender, about 8 minutes.
  • Top with butter/oil, drizzle with lemon juice and season before serving.
